The Old Cannon is more than just a pub – it’s also a working brewery in Bury St Edmunds. Brewing takes place right here in the main building, with our mash tun and kettle located next to the bar. Today, we brew a growing grange of traditional cask ales with a contemporary twist with each gyle producing just over 2000 pints.

Our beers often take their names from British naval history, such as the bold Gunner’s Daughter or the rich Perfect Storm. With twelve real ales brewed on site and new seasonal beers always in development, there’s something for every taste.

Love what you’ve tried? You can take our beers home in bottles, bags, flagons, or casks – perfect for parties, special events, or simply enjoying at home. We also provide casks for festivals and larger gatherings.

Brewery Tours in Bury St Edmunds

A visit to our brewery is one of the most enjoyable things to do in Bury St Edmunds. Our tours last around 90 minutes and include:

  • A guided walk through the brewing process by one of our expert brewery team
  • The chance to learn about our equipment, ingredients, and brewing methods
  • A tasting session with samples of our house beers.

  • Private Brewery Tours – Ideal for groups of 4–8 people, perfect for friends, family, or colleagues.
  • Public Brewery Tours – Join a mixed group on the first Saturday of every month for just £15 per person.

The Brewing Process

Our traditional method includes:

  • Malt loaded to the grist case and mixed with hot liquor
  • Transferred to the mash tun, steeped and sparged
  • Boiled in the kettle, with hops added
  • Passed through a heat exchanger, then into fermentation vessels
  • Yeast added and left for just over a week
  • Racked into casks, ready to serve
